 Ravioli tool that finally works! September 25, 2009

Since the spring, when I bought the pasta roller attachment for my KitchenAid, I've been trying my hand at home-made ravioli. I have tried several different tools. A 10-piece ravioli mold from Italy, which worked well the first time I used it, but later I had problems with dough sticking to the mold no matter how much I floured the pasta sheets. Plus it was very difficult gauging the right width and length for the pasta sheets. I wasted a lot of dough. Next, I tried the Mario Batali plastic ravioli stamp. That was a disaster. It was much too small (I like my ravioli on the large size) as I could not get it around a small teaspoon of filling.
Finally, I ordered this pasta/pastry crimper. This worked beautifully. I could make the ravioli any size I wanted. I could utilize almost all the dough with very little waste. The crimper put a nice zig-zag edge on my little pasta pillows and sealed them nicely. Inexpensive, ergonomic, and does the job!

The one I received looks really cheep compared to the one seen in the picture. The measurements given here do not match the item I received. what I received looks exactly like "VillaWare Pasta/Pastry Cutter 6.5-in." It is actually 1.5 inches (wheel diameter) by 6.875 inches (total length) by .75 inches (widest part of handle). I tried to call Amazon but couldnt get through. The one they sent me looks like it will work, so for 5 bucks I spent, it is not worth the hassle of trying to get this straightened out.

I love this tool for making lattice or wavy edges with my pasta or pie dough. Excellent tool addition to my tool caddy.
