A Great Cook Is Made

A few years ago I made a cake for the first time in my life. I was already an expert bread maker, but I had never baked a cake. The idea came to me on Christmas Eve, early that day. My wife and I were cooking for six people that night. I had an interesting recipe for German Chocolate Cake. The recipe looked easy.

I’m American and my wife is Mexican. We were living in a very large Mexican city with Wal-Mart Super Centers and Sam’s Clubs, but the local market was much closer, so that is where we went to shop for our Christmas Eve celebration.

When I make a recipe for the first time, I usually follow the directions to the letter. The next time I’ll get even more creative. As my luck would have it, the local store did not have the two main ingredients I needed. I knew they would have been easily found at the mega superstores, but I didn’t want to fight traffic getting there. Instead I trusted my intuition and chose two different kinds of chocolate.

Not long after I put the cake in the oven, some friends stopped by to say hello. As luck would have it, I got caught up in the conversations and left the cake in a little too long. The snow capped mountains of Puebla, Mexico were right outside the front door. The oven had seen better days; the temperature inside was probably not as hot as the thermostat indicated. Due to the combination of these factors, the cake needed to stay in the oven longer than the recipe recommended.

The milk chocolate I used was too runny. The icing would not stay on the cake. The icing kept falling off the cake faster than I could put it on. Of course it was one of those nights were I was running way behind schedule. In any second, I was expecting to hear the door bell ring. As a last resort, I shoved the cake in the freezer in the hope that the icing would stay in one place.

I couldn’t believe my eyes. The cake was perfect. It was more than perfect—it was an instant legend. No one will forget that special evening. I always get request to make that cake again. I know it could never be the same. As long as I leave it that way, none of us will ever forget the German Chocolate Cake that almost wasn’t.
